MELBORNE HOLDINGS PTY LTD (ABN 82 679 043 406), trading as Criniti's Woden, is preparing to open a new Criniti's restaurant at Westfield Woden in Canberra. Criniti's is known for its Southern Italian dining experience, including handcrafted pizzas, freshly made pasta, steaks, seafood and desserts.

Criniti's Woden is seeking a suitably qualified and experienced Chef to join its kitchen team on a permanent, full-time basis.

Key Duties and Responsibilities

• Prepare and cook a broad range of menu items in accordance with restaurant recipes, portion standards and service requirements.
• Contribute to menu planning and the development or refinement of dishes in consultation with kitchen management.
• Monitor the quality, flavour, consistency and presentation of dishes throughout preparation and service.
• Estimate ingredient requirements and assist with food-cost control, stock levels and ordering of kitchen supplies.
• Check the quality and freshness of ingredients and ensure appropriate storage, rotation and handling practices are followed.
• Coordinate food preparation and cooking activities to support efficient kitchen workflow during service periods.
• Work closely with kitchen management and front-of-house staff to address food preparation, timing and service requirements.
• Apply and demonstrate appropriate cooking methods and techniques across the restaurant menu.
• Guide and support cooks and other kitchen staff in food preparation, cooking procedures and presentation standards.
• Maintain consistent portioning, plating and presentation standards across dishes.
• Ensure food safety, hygiene and workplace health and safety procedures are followed throughout kitchen operations.
• Maintain clean and organised work areas, equipment and food-preparation stations.
• Assist with minimising food waste and maintaining appropriate stock rotation and inventory practices.
• Support the preparation of food for dietary requirements and customer requests where operationally appropriate.
• Assist with training and day-to-day direction of junior kitchen staff as required.
• Perform other Chef duties reasonably associated with the preparation, organisation and delivery of restaurant food service.

Skills and Experience

• Relevant commercial cookery or hospitality qualification, or equivalent relevant industry experience.
• Demonstrated experience working as a Chef in a busy restaurant or comparable dining environment.
• Strong practical cooking skills and sound knowledge of food preparation techniques.
• Ability to maintain consistent food quality, portioning and presentation during high-volume service.
• Sound knowledge of food safety, hygiene and safe kitchen practices.
• Experience with stock control, ingredient ordering and minimising food waste.
• Ability to organise kitchen tasks and work effectively under service-time pressures.
• Good communication skills and the ability to work cooperatively with kitchen and front-of-house teams.
• Ability to guide junior kitchen staff and maintain consistent preparation standards.
• Strong attention to detail and commitment to quality.
